About ten years ago a friend walked in and said, "Hey, I got something for you Chef."
I have cooked professionally, and at home for many years, and I was blown away by the Accusharpe.
I thought "this is some kind of cheap little gimmick," but, Nay, far from it, this is by far the best knife sharpener I've ever used, and since getting this one I've given all the others to Goodwill.
America's Test Kitchen showed results of 10 high-end sharpeners, including multi-slotted electric sharpeners, then brought out the Accusharp, saying,"Unless you are just bound and determined to spend $200.00 on a sharpener, then there is no need to spend more, and went onto demonstrate the Accusharpe. They did recommend that we keep our Steel, saying that a knife edge develops an invisible "curl" which should be first removed with a steel, then run through the Accusharp for a fine, polished edge.
If this company wanted to be snobbish, they could put bone, or pearl handles on this baby, call it the Ferrari of knife sharpeners, and charge $50.00 for it.
Do yourself a favor, get one before they think of something like that.

This is partly a review of the sharpener itself. The system just rules! I've been sharpening knives for year with all sorts of different mechanisms and this is the simplest, most accurate way yet.

It does mean you'll spend quite a bit of time at first, for you have to grind the knife down to the angle of the sharpener, which can be a bit. But once that's done, you're good and then it's just simple touch-ups from then on out.

Don't buy a high-end electric knife grinder. They don't work anywhere near as well as this Accusharp system.

i bought a cheapy katana recently, not a legit forged steel katana...just one made from stainless...but nonetheless if im going to have a sword it should be sharp, right!? anyway my choices were to get the special oils and sharpening stones OR to get the accusharp...well i chose this and it REALLY does work...since my sword was more of a display it didn't already really have an edge on it, so it took a while to get it sharp,,,but now it is just as sharp as a chef's knife...if you already have a blade or an edge to what you want to cut it shouldn't take long at all to sharpen....5 stars!

Not much to say, other than these replacement blades are the same blades that come with the great sharpener.
Not sure if they mention this in the instructions, but you can turn the blades around when they get dull for twice the lifespan!

I bought these when I bought the sharpener which I love! Heck my 30 year old chef's knife is as sharp as my new one. All my knives are in great shape now.

But, I honestly don't know when I'll use the replacements. The sharpener is quite inexpensive. The technology is commonplace now. You'll be able to replace the whole sharpener for about what you'd pay for the replacement blades.

I like not having to fool with a steel. My husband likes not ever having to take his stone to my knives again.
